Now it’s the October half term break up here in Scotland I’ve had just enought time to write up this post before I go away to the sun! By the time you see this post, I will be in Barcelona doing work experience with Jordi Bordas, the 2011 World Champion Patissier from the Coupe de Mon in Lyon, France. This will not be a relaxing trip but hard work in the kitchen! I will write up about my experience when I return, but this is what I’ve been up to this week.
1. Lemon tart
This was the first time I had made pastry by hand!!! I’m embarassed to say that is the case!! I’ve always made pastry in the kenwood chef just out of laziness but I am surprised at how much better the pastry came out when made by hand. This was delicious and could easily be topped with some italian meringue.
2. Baileys creme brulee
This was the first time making a proper creme brulee and all I can say it tasted amazing. This was one of my classmates recipes and it was so easy to make. The only problem I had was burning the sugar on top…..must learn how to do that properly!!!! We also mucked up the shortbread a little, but I suppose I’m at college to learn, not to be an expert!
3. Passion fruit and vanilla semifreddo
This initially was meant to be a chocolate and vanilla semifreddo but unfortunately we had too many chocolate items on the menu so we had to change plan at the last minute. Luckily I had a jar of passion fruit paste in my toolbox so we decided to make a vanilla and passion fruit semi freddo. This was so easy to make but one of the main challenges was time. Luckily we managed to do it inbetween running to the freezer, the blast chiller and a very extra cold freezer cabinet. Along with this we made some honeycomb to give some crunch.
