We’re already in October which means that autumn is well and truly here. However in Glasgow the weather has been mild recently and I wonder when the cold weather is going to start. Not that I am complaining though!
1. Bread making class
This week I had my hospitality supervision exam in my bread making class. This class was not there to test my bread making skills, but to test my supervision and management skills. All I can say is that it was awful and a cold glass of vino blanco was needed when I got home from college! The group I was working in was making bordelaise bread, ciabatta and baguettes made using levain. I was lucky to have such a great team who worked so hard. These are some examples of what our group made.
I decided to censor the photos of the baguettes that were like baseball bats……those were not a good look!
This week at the college restaurant we made some profiteroles, thinking these would be a winner with the blue rinse brigade. These were filled with a creme patissiere and topped with a delicious chocolate sauce. Expecting loads of orders we made a few trays of them but we did not even get one order! Not that we were bothered, it was more left for us to scoff!
3. My birthday
Last weekend it was my birthday so I decided to make myself a giant cupcake. First time making one thanks to the recipe that Ruth Clemens from The Pink Whisk. If you want to check out the recipe, you can find it here. Ruth’s recipes are always fail-safe.
I also got some lovely presents including this great pastry book.
I’ve been having a chocolate overdose this week and may need to go cold turkey from the stuff! I made the following things over the past week……
