It’s been a while since I’ve blogged but the Christmas holiday period was filled with lots of work. It’s the busiest season in the hospitality business so no rest for the wicked! However, I’m now back into the routine of college and work after the usual Christmas excess. This week I have been been practicing lots of different things using hazelnut praline which I normally buy, however this time I decided to make it myself. It’s so easy to make and tastes divine mixed with chocolate or on it’s own. Here are a few things I made this week.
1. Hazelnut praline macarons
I’m getting the hang of making macarons, slowly but surely. The secret to these babies were the two week old egg whites which I had in the fridge. The older the better for macarons. These were made using an italian meringue rather than the french meringue and were filled with a hazelnut praline chocolate ganache.
2. Hazelnut praline brownies
These were really moist and gooey brownies and they tasted fantastic. Also super easy to make!
3. Hazelnut praline chocolates
This was the final victim of the hazelnut praline attack. Using some Callebaut milk chocolate chips, I made these handmade chocolates using the praline. To make the filling, use this recipe here.
