In my diary this week

It’s been a while since I’ve blogged but the Christmas holiday period was filled with lots of work. It’s the busiest season in the hospitality business so no rest for the wicked! However, I’m now back into the routine of college and work after the usual Christmas excess. This week I have been been practicing lots of different things using hazelnut praline which I normally buy, however this time I decided to make it myself. It’s so easy to make and tastes divine mixed with chocolate or on it’s own. Here are a few things I made this week.


1. Hazelnut praline macarons

I’m getting the hang of making macarons, slowly but surely. The secret to these babies were the two week old egg whites which I had in the fridge. The older the better for macarons. These were made using an italian meringue rather than the french meringue and were filled with a hazelnut praline chocolate ganache.

2. Hazelnut praline brownies

These were really moist and gooey brownies and they tasted fantastic. Also super easy to make!

3. Hazelnut praline chocolates

This was the final victim of the hazelnut praline attack. Using some Callebaut milk chocolate chips, I made these handmade chocolates using the praline. To make the filling, use this recipe here.

    I’m always up for macarons! I love to make them but I hate them at the same time – especially when egg whites are not stiff enough and they all go flat. Sylvia x

    I went on a chocolate experience yesterday and we scoffed down vast quantities of hazelnut pralines. Yum. I would just love it in macaroons.

    Oh God, I can feel the weight piling on just glancing at my computer screen. I ADORE praline and those heart chocs in particular are jumping out at me. Lucky lucky you getting to make goodies like this every day :) )
